Menus revolve around a core of values which focus on the use of local, free-range, organic or sustainable ingredients wherever possible. The development and creation of the monthly changing menus takes into account the seasonality of locally available produce.

LOCAL
We go along way to stay close to home when sourcing the finest Kentish produce to use in our kitchen. From locally reared Berkshire black pigs to fruit and vegetables from our own allotment.
FREE-RANGE
Meat that comes from animals that have lived a life in free-range conditions tastes better – fact. We use chicken from nearby Rorke’s Drift Farm & game from carefully managed local estates.
ORGANIC
If it says organic on the menu then it probably is. We seek produce which has been certified organic by the Soil Association. If it doesn’t say organic on the menu then it probably is but may come from one of our smaller producers who use organic methods but are not yet certified.
SUSTAINABLE
What is sustainability? It is the potential longevity of vital human ecological support systems, such as the planet's climatic system, systems of agriculture, industry, forestry, and fisheries, and human communities in general and the various systems on which they depend in balance with the impacts of our unsustainable or sustainable design. In a word… If it ain’t good for our kids future world – we won’t use it!
